A bit of history, Balti is a combination of north Indian and Pakistani styles of curry that traces its origin to Birmingham, England, in the late 1970s. 'Balti' in the Indian vernacular can refer to a steel or iron pot, similar to a wok, in which traditional food is cooked. Balti ingredients are cooked mostly in the same way as any other curry. The main difference is the way it is served, in a steel pot with handles. The flavours, preparation and presentation all help to create this colourful, popular dish.
