Khorasan (also known as Kamut) is an ancient grain that has been re-discovered in recent years. It is more easily digested and assimilated than regular wheat grain so, much like spelt, some people with wheat sensitivities can tolerate it, however, it does still contain gluten.
It is higher in protein than wheat grain, contains zinc, magnesium, B vitamins, Vitamin E, protein, amino acids and essential fatty acids. Khorasan flour has a buttery-rich nutty flavour and smooth texture.
Khorasan refers to a historical region in modern-day Iran in the northeast.
